How long does it take to migrate DNS servers?
It depends on the size of the zones. Usually there is no need to switch everything at once — the TTL is decreased, the records are migrated, and then the NSs are switched.

Failover pair (eg ISC DHCP) or centralized IPAM/DDI tool. The minimum is reasonable redundancy and a tested outage scenario.
